    All the brown varieties I have grown went from green to brown before moving onto a red tint. What you have is most unlikely to turn brown after orange/red.

    I remember a post that mentioned using Yellow 7s in place of Bonnets flavour wise. At least what you have is on the right track flavour wise. I still a BonNot plant of the wrong Capsicum species from 2010. The vendor probably had never actually tasted a Scotch Bonnet.
