    Well if they're from India they probably knew what they were looking for and probably won't consider an orange hab that hot. Most Indian cuisine that I've tried tends to be quite fiery. As for your only ripe hab being picked, well that's just wrong but what are you going to do?

    It works well, give it a shot! I also used a brown sugar based rub on them right before they went in which really works well for sealing in the juices.

    Here is the link to some of them. I still have more to process yet. Btw, it was fabulous! I took half out an hour before the other and froze it for later. All I'll have to do is reheat in an oven at 350f for an hour and viola! Smoked tenderloin in the middle of winter:)

    Well I ordered some of those from Cross Country but do not have any pods yet. I will post back with my findings once they come in. The plants look right compared to pics I've seen anyways.

    When to pick?

    Most peppers don't get going with their sugar production until they start turning to their final color. (whatever that might be) Some peppers are ok to eat while green (taste) but most don't develop a decent taste until they ripen.
