    You say that but I set my heat mat (read: electric fry pan full of sand) too high and the pellets were 41c. I had a germination explosion, just about everything in that lot sprouted in about 3 days. The biggest problem I have with heat is during fruiting.

    Pepper has over 200 active compounds which attribute to the taste. The compounds break down very quickly. This is why freshly cracked pepper is no comparison to pre-ground pepper. (also, cbf reading the whole post so sorry if someone already mentioned this :P )
