I dont think there is a rule for when to water sprouts. If you think they are dry, give them a small drink. If they start to sag down, give them a small drink. Keep an eye on the color. Too much water will turn them a lighter green/yellow color. If that happens, just hold off for a while...

I use 3 gallon pots with success. I have had 2 foot plants with pods in red solo cups. Last year I used 3 gallon pots exclusively and when the season was over I inspected the root balls and didnt find any that were root bound. Bigger is better, but 3 is sufficient
