I just made a rocoto/tart cherry jelly that I might have to add to some ground beef and try that for a jerky.

    Red Rocoto Jelly

Ok, finally got to make some jelly.  Red rocoto/tart cherry sugar free jelly.  Came out really good.  Does have a very "earthy" smell that I noticed when I opened the rocotos.  It's not bad, just never noticed it before. Is that normal for rocotos?

    Red Rocoto Jelly

So far, life has been in the way of anything setting.  Hoping to make a batch this weekend and try it out.  Can't decide if I want to do a straight rocoto jelly or add some fruit for the first batch.

    Unripe rocotos

Thanks everybody.  I've had a handful in a paper bag for a week now and they are VERY slowly ripening. I've also been bringing them in at night to protect them from frost but I think this weekend is going to be the end of the season.

    Unripe rocotos

Does anybody have any ideas on uses for unripe rocotos.  My season is about to end here and I have 5 rocoto plants I am going to try to over winter.  I only got about 10-12 ripe pods from them, but there are probably 20-25 pods still on them that are still green.  Just wondering if there is any...

I got my biker billy seeds from Trentl and started them in January this year.  The taste was great but I need to plant a couple more plants this coming season.

storage To wash, or not to wash before Freezing

I always wash before freezing just in case there is any critters.  I always lay them out whole on a baking sheet and freeze them, then into vacuum bags and back into the freezer.  I've had them stay great for a year.

Thanks sauce, I ordered from RFC just now.  I'm gonna try the Numex lemon spice, Biker Billy, and Zapotec next year.  I'll have to try and talk you into sharing your jala sauce recipe cause I love that stuff too

    annuum Zapotec Jalapenos

I just read through this and think I need to add Zapotec to next years grow.  I grew Biker Billys this year and loved them because they were hotter than regular jalas.  I made 10 jars of jelly with the rest of what I had last night.  Can anybody tell me a reliable vendor to get some Zapo seeds?

Well, I think I'm all in.  Picked everything on the plants cause we getting threats of frost. 276g YTD + 658g = 934g. Thanks Guru!  I ground this batch and added 2.5% salt and put them into a fermenter jar for hot sauce. Should be hot!
