    drying Deer Jerky gonna be so good!

    Got 11# of deer meat, mixed it up with cracked pepper/cheese and teriyaki/cheese. Let it marinate over night and dehydrate tomorrow.

    Carolina Reaper chex mix

    Made up some chex mix: melted butter, chex mix seasoning packet, rice, corn, and chocolate chex, pretzels, mixed nuts, bagel chips, and reaper powder. Baked in oven @ 245 for 1hr stirring every 10mins. Right pan is regular for the non pepperheads.

    Smoking some habaneros for next batch of sauces.

    Smoked about 3#'s of habaneros yesterday, and let them sit overnight. Going to be making two batches with different ingredients in each. Then off to the ferment shelf for 3-4 months.

    Winter indoor grow/ 2020 grow list

    Started the carolina reapers a few days ago for a winter grow the temp is averaging 84.6-85.1F. Just fine tuning the station before planting the rest in Jan/Feb 2020.

    drying Jamaican Jerky

    Started out with 5# of bottom round, sliced to an 1/8". Marinated overnight in Jamaican Jerk sauce. After dehydrated yielded around 3# of jerky.

    Almost time for tabasco sauce making.

    Have a little over two pounds of tabasco peppers in the freezer, waiting for more to ripen. In the meantime going to try to simulate an old Jack Daniels barrel and have these oak cubes soaking. Gonna let them soak about a month or so, air dry them and hit them with a torch for the char taste...

    Gonna to try to recreate Trappeys sauce(or make better)

    Harvested some premature tabasco peppers today and have some left over garlic cloves from the kimchee ferment. So I figured thin slice the garlic and add it to the tabasco/vinegar mixture. Have some dehydrated ghost peppers from last year I might throw a small chunk in there as well. Don't hurt...

    During this heat wave the plants talked me into placing them on the porch(yes they have me trained haha). They are doing super good, producing like crazy, and small dose of water every other day.
