Just curious why the ginger and why the tapioca starch instead of cornstarch.   Is there ginger in the original Mae Ploy?   I don't have a bottle handy to check the ingredients.   And what's the benefit of tapioca over cornstarch?

recipe-help Mae Ploy Sweet Chili Sauce - Imitation Recipe?

Don't speak for me.   I make my own ketchup, as do a number of my friends, and the flavor is leagues ahead of the common commercial crap on the market, most of which are loaded with corn syrup and inferior ingredients.   Vine-ripened San Marzanos make all the difference.  So does getting rid...

pics Kudos for an Online Peach Habanero Hot Sauce Recipe

That's awesome to hear.    Frozen peaches would probably have worked just as well, too.   I believe I ended up putting 9 habaneros in mine.   They were large forms, too:  Roger's Giant Red Habanero and Roger's Giant Orange Habanero.   I highly recommend both as a default habanero in your...

video Sauce from dehydrated peppers and dry ingredients only

I was glad to find a thread about using dried chiles.  When I collected seeds this year, I dehydrated all of the pods that got deseeded.   If I use these in making a sauce at some point, do they need to be pulverized into a fine dust to use them, or should they be reconstituted in liquid and...

pics Kudos for an Online Peach Habanero Hot Sauce Recipe

Chileheads,   This year our peaches ripened around the same time as our habaneros, so I set some of each aside to make a Peach Habanero hot sauce recipe I found online.  I was so happy with the result that I wanted to give the recipe a plug.   If you can get your hands on the ingredients, I...

recipe-help Pulling Pickled Chiles out of Storage for Hot Sauce

Hey, Chileheads . . .   My partner and I pickled a number of our extra chiles in Aug 2019 and they've been sitting in the pantry since then (see photo below.)   After 15 months, I'd like to actually do something with them.   A hot sauce seems the most reasonable option.   I have no idea how to...

Aji Mango: Which is the original? Which one is better?

I purchased seeds of the stubby phenotype already and am using seeds I've saved of the long phenotype from this year's crop (the chiles in the first photo in the thread.)  That's kind of you to offer.

Aji Mango: Which is the original? Which one is better?

White Hot Lime was quite prolific for me this summer.   What a terrific all-around pepper.   My couple of plants of it all threw the same color peppers, with no red to speak of.   I'm glad I saved seeds.

Aji Mango: Which is the original? Which one is better?

RickVM,   I've got seeds for both for next season, but that was kind of you to offer.   I just wanted to get a sense from folks which one was the overall better version, mostly from a taste standpoint.   Thanks again.     SCARBO

Aji Mango: Which is the original? Which one is better?

Chileheads,   I saw a video on Youtube of Johnny Scoville raving about the flavor an elongated form of Aji Mango.   That's the form for which I bought seeds and now make a hot sauce I really like.   I recently learned of the stubby phenotype of Aji Mango that many people also grow.   I've not...

Any Recommendations On Must Grow, Low To Mid Heat Peppers?

Oh, and make sure you add Cobra, too.   What an awesome low-heat pepper that's terrific fresh and dries beautifully for wreaths.  They get as long as Thunder Mountain Longhorn.   I had quite a few that were over 12-inches.   Note:  This is not 'Black Cobra' which is commonly available.   I got...

Any Recommendations On Must Grow, Low To Mid Heat Peppers?

Although 95% of what we grow are super hots, we also make sure each year that we have a half-dozen plants each of Pepperoncini, Shishito, Padron, and Jalapenos.   We eat a ton of pickled Pepperoncini and have friends and relatives who count on a quart of them at Christmas.   Man, are those...

    Storing Chile Seeds / Desiccants

Hey folks,   I'm attempting to store my own chile and tomato seeds this year and had some questions about how to go about it.   I've got each variety is its own little sealed seed packet and have all of the packets now in a sealed storage container.   I've read in a couple places that they...

Visions of Chiles, Dancing in Our Heads

We're relatively new chile fanatics with our first decent home garden crop just this past summer.   I think it's safe to say we too have officially been bitten by the chile bug.  I think we grew around 50 plants to maturity this past summer.   For 2020, our plans are to up the number to 132 and...

This is a bit of a long shot, but I was wondering if anyone may be familiar with this particular bottle and know where one may purchase it?    I spoke with the owner of it and apparently it was a gift he'd gotten.   Sorry for the size of the photo; I simply linked to the original image and...
