If it is only a couple mature plants I might suggest looking for a "UFO" solution around 50-90w as it looks like they are easy to hang and would provide sufficient light for a medium size...

    Is there a possibility your peppers are cross pollinating? If they are even remotely close together you will get cross pollination unless you use something like ultra fine mesh bags on the buds before they flower, then hand pollinate.

    DRYING GHOST PEPPERS

      As an engineer I fail to see how 1oz of dried =/= 1oz powder. Unless you are losing some to the grinder or the powder flies around everywhere it should equal the dried weight.
