    Why do peppers seem hotter raw?

    I’ve heard rumors that cooking or boiling peppers can make them milder. I’m sure when you’re scorching a pepper over a flame that the reason your eyes are burning is because some of hot flavor must be getting lost in the cooking process. Is this true for all forms of cooking?
