I was in the mood for a little experimenting and ordered a bottle of 2Hot Rocoto sauce. The first thing that struck me was that this sauce is made with no vinegar at all and claims to be made from 99% pure rocoto pulp. Very interesting earthy (almost like a fresh green bean) taste with some respectable heat. Not overwhelmingly hot, just a nice long glow. The flavor of the rocotos shines right through on this one and was a bit surprising at first. Good stuff and highly recommended to those that like rocoto peppers!
