A couple general pepper questions.

So I am still a bit of a noob in the Chilli world. I have just now finished trying two of the super hots Naga Morich and a Trinidad Scorpion. Anyway I was just wondering, when people describe sweetness in a pepper is that similar to the crisp flavor of a bell pepper? I dont really get a sugar sweetness, more like bell peppers are kinda sweet. I am finding peppers have subtle taste differences like cigars that I am not yet able to totally describe.
Second. Do you get stomach cramps from the blood rushing to the stomach to cool it? As well as numbness and tingling in the face and lips from the same thing? I am guessing its partly due to the ephedrine flowing to the pained areas? Thanks to those who respond.

Good questions Steeley. I am fairly new to eating them as well. Had my fair share, but only in the past few months. Anyways, I dont get a sugar sweetness, but there is a definite sweetness when I bite into it. Some are more citrusy (yellows), and some taste like battery acid (douglah). I dont know if I would compare it to a bell pepper, because I havent tried a raw bell in a little while, I usually cook em.

On the stomach pain. That is something that all those who eat supers try their hardest to avoid. I have got it about 75 percent of the time. Luckily yesterday and today I had 0, but I think it had to do with the starchy meals I ate before hand as well as eating a full banana before the chili. At least that is what I attribute it to. Some people never get it, but I really believe that it has to do with what you ate that day. Just try one on an empty stomach and you will never do it again.

On the numbness. Only twice. The Assam Bhut Jolokia, and tonight with the ButchT. Tonight I had no use of my hands, legs, and my face was drooping. Kind of like I had a shot of novacane. I posted a vid, you can check it if you like, but it gives you an idea of how much numbing and tingling I got and you can gauge. Once the numbing stops I get a crazy rush and feel almost the perfect calm.

I got an awesome tip for the stomach pain. A piece of bread covered in peanut butter. I have had no problems with stomach aches since I have been doing this. I did 15 minute burn once on an empty stomach and it was a horrible pain.
When I ate a Naga Morich tonight I got numbing and tingling so strongly in the face it reached back behind my ears! I described it like I had gotten a shot from the dentist, like you did! I also know what you mean by the perfect calm its like your whole body feels in sync.
For sweetness, I cant really describe the sweetness I suppose, I havn't had a citrus or cherry like taste as I have heard some describe, but it is sweet. Nibbling on a Bhut Jolokia and a Naga Morich I could taste differeces. Ghost was sweeter and bold in taste, Naga seemed more toned down and mild.
 
I no longer get the stomach pain, even on empty stomach with superhots.
However a little bread, milk, potato, banana can go a very long way. It is foolish to eat superhot stuff on an empty stomach, despite me always doing it, without fail almost every time....

This is my take on things.

As for the sweetness, well it very much depends on the variety and growing conditions. sugars are formed and stored in chiles, especially during the ripening process. the actual sugar content varies greatly. some chiles have no noticeable sweetness at all and some are sweet like a fruit. I have yet to stumble upon a chile that is "candy sweet", but I suppose that is possible. some of the sweeter varieties have such a high sugar content, that they actually caramelize when heated.

As for the flavor, well that too depends greatly on the species, variety and growing conditions. I find that generally Capsicum chinense chiles have a different flavor than Capsicum annuum ones. while a JalapeƱo or other chiles may resemble a Bell pepper in flavor, Habaneros have a completely different flavor to them. some chiles are bland and have no real flavor, some taste like a Bell pepper, some are bitter, while others may taste like a completely different fruit. a common trait of Capsicum chinense chiles, especially the sweeter ones, is the citrus aroma they have. some smell like an orange peel and others smell exactly like a lemon. it does not mean they taste the same as those fruits, but it does affect the overall flavor. some chiles have even weirder flavors and aromas. a good example is one of my new favorite chile, Pimenta de Neyde. it is a Capsicum chinense and has a very flavorful and sweet Capsicum chinense flavor. now while I usually find them to smell and even taste a little like a combination of lemons and berries, they still have that sharp tang Capsicum chinense chiles have. a week ago or so I harvested a batch of late season chiles, that were much brighter than the others (due to low light and cooler temperatures) and guess what! they smelled exactly like blueberries! that kind of freaked me out a little, and was tempted to try one. it had a milder Capsicum chinense flavor and was very sweet with just a little tang, almost like a real blueberry. it does not mean all chiles have that flavor, nor does it mean all Capsicum chinenes have it. heck, not even all Pimenta de Neydes do!

As for the stomach ache. as with some of the hotter chiles and/or condiments, I tend to feel a slight burn on the inside. that burn turns into a great discomfort when digested. it gets even worse when out of the stomach. you get used to it. as for the cramps, can't say I've had any. padding your stomach does help.

I get sweetness in the Bhut Jolokia, and Naga Morich, The Trinidad has more of a plain taste and just pepper ( capsaicin taste? ). Like I said I still have some trouble describing them. Datils have a very noticeable taste difference. Pretty much all peppers have the same underlying tone in like "Pepper" taste right?

I agree. In doing different taste test nibbling between the Bhut Jolokia, Datil, naga Morich, and Trinidad Scorp, the Bhut definatly has the best and most distinct flavor! With all peppers kinda having a similar taste, could that just be the Capsaicin taste? I havn't really tasted a citrus sweetness I dont think but, from what I gather, Habaneros are a sweet pepper and one to kinda weigh sweetness to perhaps?
 
If you really want to find a difference in flavors try taking a yellow fatalii next to the bhut jalokia. There's a huge difference between the two. You get a really strong citrus flavor with the fatalii as opposed to the bhut. The bhut is much sweeter. However, both flavors are very pronounce, from there it might make it easier to find flavors in the peppers. With some peppers you need more than just a couple slivers to find the flavor. With the Butch T Scorpion its hard to find the flavor because of the unbelievable heat, but once you find it you'll get its earthy flavor. Just keep sampling peppers and the flavor will find you.
