This ones marked Aji Amarillo I looked online and most of the ones I saw were bushy This ones shot straight up close to 4 foot tall now just one big stalk so far.
I have two Aji Amarillo plants going and they look a lot like yours, just not as tall since I have them in small containers. Mine are not bushy either.

They're kinda odd plants, appearing perpetually wilted.
Mine are bushier, FWIW.
The biggest is doing well and has dozen or so ~4 " pods on the way.
(I'm happy if my plants manage to set any fruit before the heat of mid-late May shuts down flowering.)
Yep, that's the way mine looked last year. All had to be staked up. This year everything is growing slow for me, so I will still have to wait and see how they turn out. Yours look great.
