Baby corn

Anyone have experience with this stuff? I read that the stalks would get from 36-60 inches tall, but mine is 8 foot. I did no research, thought it would be a no brainer, but now I hear it needs picked "immature"...My gardening instincts refuse to allow it.

We did stir fry last night, orange chicken. I snuck a couple of cobs in, each about 4 inches long before I cut them. It was terrible--the cores were hard like granite and the flavor way too "cobby".

I let the cobs go too long, didn't I.....

Well baby corn is literally baby "real" corn so yes it needs to be picked immature i.e. baby.
 
I have no experience growing. I just know it's actual immature corn unlike baby carrots.
