  I may have done this last year,but this year I used Chris's Thai pepper to make a killer pineapple-mango Thai dipping sauce.
Trick for my cheese sticks is to grind a box of seasoned stuffing mix instead of just bread crumbs.Egg wash is not in the pic.

   You are correct Chris,clean oil and proper temp make all the difference in the world.P>S your powders kick ass.I only use them on special plates.

Thanks Randy, I know I say it all the time but the wife and I go through about an oz a month of that Thai Blend! I use it more than salt.

  The stuffing mix was a watershed moment for my ability to do a great cheese stick.
