Cook from your heart to show love to our brother. His recipes and spirit live forever on THP. Rest In Peas (rice and pigeon peas my friend).

Create one Caribbean meal from the following Caribbean islands (and not the grey continental countries, or Bermuda, only what is in the pic with dark text is defined as Caribbean for all intents and purposes here.)

Please chose from the following to compose your meal:
  • A one-pot meal (no sides except 1 homemade bread/roti bread, or fritter/bread-based accompaniment, as the idea of "one-pot" is that is your entire meal).
  • An entree with sides (3 max, 1 may be an app).
  • A sandwich/wrap/roti with sides (2 max, 1 may be a soup-type accompaniment).
  • An assortment of hand/street food, as many as you want as long as they are all small bites. Caribbean tapas.
(Any homemade bread does not count against your sides.)
 
Requirements:
  • You must serve your meal with one homemade "Island Beverage". That is up to you! Rum, frozen, non-alcoholic, whatever you want.
  • All sauces and salsas must be homemade, no prepared jerk sauce, curry, etc. Of course staple sauces like soy and hot sauce may be used as ingredients of building your own sauce.
  • No prepared spice blends unless they are base blends like garam masala or 5-spice, etc. for making your own seasoning, but spice blends from scratch appreciated.
Dessert:
  • If more than one person posts a dessert a second poll will be opened. If only one person enters a dessert it is for fun only. So please post them as separate entries with the same PoL, and, yes, must have a hot pepper ingredients and follow same requirements.
You may post pics of your process throughout. To enter compose a final post and title your creation. Please note the following:
 
CLICK: The 5 Rules for an eligible entry
Title your entries, list all ingredients and cooking methods. Exact measurements please where applicable.
PoL: $.30 (PoL only needs to be shown ONCE in a pic with all or a majority of the ingredients used, or in a final presentation pic of the main entry, preferably not on the plate.)
PIC ALLOWANCE: Unlimited for meal, 5 for dessert. Remember some prep/cooking shots are "money" and look good in your final post. It doesn't have to all be final presentation.
