Flan de Mango



I really didn't think this was going to turn out. I had some hiccups but I think it's worth entering. My problems were just from my inexperience in making a flan.

Ingredients
1cup sugar, 1 tablespoon lemon juice, 2 cups of puréed mango, 1 can of condensed milk, 2 tablespoons of corn starch, 1 tablespoon DonQ white rum, 1 cup of evaporated milk, 6 eggs beaten, pinch of salt. Cinnamon and Chipotle chile powder to garnish once plated.



Caramelize the sugar with the lemon juice, and pour into the bottom of the pan. Beat the eggs, and cut up the mangos and purée in the blender. Add the purée, eggs and other ingredients to the pan. Place the pan I used about 8x13 into another pan with water in it that won't come up over the pan when you set it in there.



Preheat the oven to 350F. Cook for 45mins-1hr until you can stick a fork into it and it comes out clean. Let it cool for about 10-15mins then flip it over onto a platter.


Slice it up and plate it, then sprinkle the chile powder and cinnamon on it.

I really love this! The cinanamon and chile powder cuts the sweetness down and blends great. I will definitely make this again. It should go a lot better next time with the experience I gained.

Jerk Marinade ingredients:

  • 1 T Pepper corns
  • 1/4 cup brown sugar
  • 1 T Ginger
  • 1/4 T Nutmeg
  • 1/4 T allspice
  • 1/2 T Smoked bonnet flakes
  • 2 scallions
  • 2 T thyme 
  • 1 T Cinnamon
  • 2 T soy sauce
  • 2 T Ketchup
  • 1/4 cup canola oil
  • 4 Caribbean red habaneros or scotch bonnets if handy.
Directions:
  1. Deseed peppers
  2. Add ingredients to food processor
  3. Blend until smooth.

Bake Recipe

Ingredients:
  • 3 cups apf
  • 1/4 Tsp salt
  • 1 tsp baking powder
  • 1/2 tsp yeast
  • 1 cup water (warm)
  • 1 T shortening
  • 1 T butter
  • oil for frying
Directions:
  1.  In a large bowl place the flour, yeast, salt, margarine, shortening and baking powder. Use hands to mix everything together. 
  2. add in the water and form into a smooth dough. 
  3. cover and rise for 45 min.
  4. divide into 5 pieces and roll into balls tennis ball sized. 
  5. Place on parchment lined baking sheet and cover with kitchen towel for 15 min. 
  6. Heat oil over med-high heat. 
  7. lightly oil counter, flatten and work dough balls into 6" round portions. 
  8. Fry until golden brown.

Mango apple slaw
Ingredients:
  • 1/4 head green cabbage
  • 1/4 head purple cabbage
  • 1 apple julienned
  • 1 cucumber julienned
  • 1/2 t crushed red pepper
  • 3 fresno peppers sliced
  • 3/4 cup mango diced
  • 1 red onion julienned 
  • 1 red pepper julienned 
  • 1 t lime juice
  • 4 t olive oil
  • 4 t rice vinegar
  • 1 tsp sugar
  • 1/2 tsp black pepper
Directions: mix ingredients together, chill and serve.

Fried Baigan (egg plant)​
Ingredients:
  • 1/2 cup bread crumbs
  • 1/2 cup panko crumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1 tsp fine chopped chives
  • pepper to taste
  • 2 eggs. 
  • 1t water
Directions: combine dry ingredients, wisk eggs and water together. Dredge egg plant slices through egg mix and roll in bread crumb mix. Fry until golden brown
 
Bubbly Melon n Berry Iced Soda
 ​
Watermelon, Strawberries, ice blended. Add sparkling strawberry lemonade.

Plate everything and serve before the family pushes you down and takes it from you.
