dried Billy Biker "Chipotle"

had to do something with these Billy Biker Jalapenos, so I sez to myself...hmmmmm....chipotle....

peppers picked on 28 August...about 5 pounds...

I just tasted it and it's pretty tasty AND spicy hot...anybody else like chipotle?
 
I smoke tonnes of peppers but I hate to always use the Buzz word chipotle. I do however try to replicate the more desirable chile ahumado (Meco, tipico) type of chipotle when I smoke jalapenos, and smoke at low temps for long periods of time

I would be interested in your technique as well; I'll be having some "Early" variety JalapeƱo pods coming along soon. Cheers.
