seeds Bunch of peppers, which seeds to plant?

So, if I have a handful of nice looking store bought habs, so I take the seeds from one and plant or do I take from many?

What is the protocol for which seeds to plant and how many per container of dirt?

I bought a Jiffy greenhouse that holds 72 starter plants.

I've never done this before but I grew a rose by sticking a seed into the dirt of one of my wife's plants.

Take seeds from the ripest peppers, they're the most likely to bi viable. and with a Jiffy starter pot, I would only put one seed, or if I put two, I would be prepared to pluck the smaller of the two when they sprout.

They all have pretty much the same ripeness.

I have some saved seeds from earlier bought batches of ripe hab. I could use some of those too.

BTW it's still cold here in NJ in February. Is now too early to start these things? How fast do they grow? It may not be until late April or May until they can be transplanted outside....
