Cheese Steak a la D3monic

Cheese steaks last week where a big hit with the family so decided to do them again this weekend. 
 
Picked up a 2lb flank steak for $16
Froze it for 40 minutes to make easier to cut and sliced as thin as my patients allowed by hand

I'm big on flavor, screw that easy cheese and unseasoned meat from philly. This is flavor country. Have the meat marinading in McCormicks Mesquite marinade with some garlic and homemade Worcestershire sans the anchovies. 
 
 
 
Toppings 
 
2 pablanos
1 habanero
2 yellow onions
package of shrooms
3 shitaki mushrooms

Fire Roasted the Pablanos

Sliced pablano, onion and habanero thin

Sauteing in pan with 3 T of kerrigold butter until nice and caramelized (approx 30 minutes)

Now that the onions are caramelizing we start the meat and the cheese sauce.

Preheat oven to 400 for buns
 
In a small sauce melt 1 T butter
 
whisk in 1 teaspoon flour and cook one minute
 
Slowly whisk in 1 cup room temp milk and whisk over medium heat until thickens

Remove from heat and Stir in
1/4 cup grated parmesen
1cup shredded cheese blend of Asiago, provolone, Romano and Parmesan 
3/4 5 cheese Italian blend

Add1 T olive oil to large pan, saute meat over high heat

Toast buns for 1 minute
 
Remove from oven and fill with meat, cheese sauce and onions peppers.

D3monic your cheese steaks look spot on.....I could murder at least 2 of those bad boys and drown them down with a nice Dark Stout.....nice looking Sammich's.
