Chiliheads dream job

I'm actually an electrician but went to work for B&G foods as a Maint mech. where we make all sorts of sauces, pepper mash (hot chop) and pickles, If you look at the "Our Brands" drop down we do the Trappey's pepper sauces & sliced jalapenos, other brands as well. Emerils pasta sauces and salsa's, Ortega.
We are actually allowed to bring product home (take right off the line) as long as HR signs it.
I brought home a Gallon jug of Trappey's Red devil just for the jug. Sauce is Ehh. butt he just will be good for next years ferment. I imagine ill be able to bring home some empty woozy bottles sine we get them by the pallet load. I was watching the line today as they were filling a lousiana style sauce in bottles with the dropper cap, I thought they were stuck in the lid like the foil seal in alot of bottles but they have their own machine that snaps them on before the cap gets spun on then the heat sleave.
It's actually pretty cool to see first hand how this stuff is processed before headed to the stores.

sounds like a great job. do they have chefs on staff or was that something that was contracted out?
it would be quite the prize to sit in the lunchroom with a production chef to get his take on how products were initiated, then made its way through the design cycle to finally production.
kind of neat how they colour coded the pickled peppers with red lids for hot, green for mild.

i have helped many food processing companies in the past and whether it was the kill floor, bottling line or just plain shipping dock, i loved every second and tried to educate myself on every aspect of the client's business. i learned a lot from a major generic pop manufacturer, sitting in the breakroom, listening on how 1 generic brand was sold to large retailer#1, then how the recipe was tweak for large retailer#2.

taste their santa fe pickled peppers for me and let me know your take.
enjoy!

That sauce isn't real hot or anything but it's pretty good on wings.
We had a SQF (safe quality foods) audit today so once things calm down I'll see about some bottles for my fermented sauce.

Brought this home mainly for the gal. jug.
