So, I just experimented with my lunch at work today, starting with a base of black beans, then adding some Louisiana style Crystal hot sauce, some Colby and Gjetost cheeses, and half of each a large Extra Hot Hatch, Datil, and Chocolate Bhut Jolokia minced into the mix and microwaved for about 4 1/2 minutes. The cheeses, chilies, and sauce melded together and complemented each other perfectly, and given the heat-laden peppers I used, it wasn't over the top. Have to finish the other half tomorrow. Mmmm!
