recipe DIY Pimento.

I would like to make my own Pimentos for Pimento cheese.
The process I understand, however I need to know if there are other type peppers I can use.

I am growing Lesya peppers now, medium sized pods with really thick flesh & a super sweet flavor.
Has anyone made their own Pimentos from peppers other than true Pimento plants?
What is your best method?

That was the question & right off the bat I screwed up LOL.
That's ok, I found out you can use the Lesya peppers & if you roast the pepper first you get smoky Pimentos flavor.

I had seen where many people just steam & skin the Pimento peppers first. I roasted & skinned them & then steamed them tender.
The look the mouth feel & the taste is perfect for making Pimento cheese spread with grated Jalapeños.

Next batch I will try steaming them first, however that slight smokey taste is growing on me. 😃

Batch #2 just steamed & skinned.
Dead ringer for store bought only better with fresh Jalapeños.

I like the slight smokey flavor best, so next batch we roast the peppers first.
