We do this w/ mung beans ... love 'em ... best device is the thing called an Easy Sprouter ...
You can get the mung's super long and engorged like in chinese food without being able to create some vacuum pressure, but the way they DO turn out tastes great - they just aren't as huge ...
In case you do, they are more sweet and healthier RIGHT after they sprout than when they've grown more - albeit have more protein and less other beneficials when they have grown ...
It's good stuff ...
