shade does different species of peppers have different shades of green?

Like my serranos and jalaps have a nice forest green while my tabscos and carmens and habs have like a light green color to them

that all get feed the same and watered the same also all in the same soil
 
Yes.

My Jalapenos went from light green > dark green > chocolate brown > red.
My Tabascos went from yellow > pale green > orange > red.
 
In that case my answer would be yes. :P

My Jalapeno leaves are a darkish dullish green.
My Tabasco leaves a lighter more vibrant and glossy green.

Yes, but also the nitrogen level in the soil matters too... just because they're in same soil doesn't necessarily mean that the size of plant or other factors won't deplete the nitrogen at a faster rate.
