recipe Dragons Eggs - hot candy

@salsalady gave me the idea for samples at the farmer's market, which has me off on an exploration of all sorts of things to try with hot peppers. I figured maybe I should share the recipes here!

So, here's this week's creation: Dragon Eggs:

White chocolate strawberry truffles with Dragon's Breath peppers.

Ingredients for the filling
  • 1 Cup white chocolate chips
  • 3 Tbs cream
  • 1 Tbs butter
  • 3 Dragon's Breath peppers (dried)*
  • 1/2 tsp strawberry extract
  • 1/2 tsp red food coloring
Ingredients for the shell
  • 1 Cup white chocolate chips
  • 1 Tbs neutral oil or fat (ghee, shortening)
  • 2 packs strawberry Pop Rocks**
Steps
  • Grind the peppers and then add to the cream. Mix.
  • Strain into a bowl, then add 1 cup chips and butter.
  • Melt the chocolate: microwave it for 15 seconds at a time, mixing after each burst, until it's creamy and even. Or use your preferred method.
  • Add the extract and food coloring and mix well.
  • Chill for at least 2-3 hours. Overnight is fine.
  • Scoop out 1/2 tsp. pieces and roll into balls, placing on a parchment-lined baking sheet. Wear gloves for this step!
  • Chill the balls for an hour in the freezer. (you want them firm for the next step)
  • Put 1 cup chips and 1 Tbs oil in a bowl and melt (see above)
  • When fully melted, add the 2 packs of Pop Rocks.
  • Drop the chilled balls into the melted chocolate and turn with a fork to cover. Place on a parchment lined baking sheet.
  • Chill for at least 30 minutes for the shell to set.
To serve, it's best to let them warm up some so the centers are a little less firm.

* Adjust quantity for preferred heat level, and/or substitute your favorite pepper, if desired.
** Pop rocks are optional but make for a rather interesting experience!
