Dried Peppers

This is kind of a double post. I had a late night last night and accidentally posted this is my hydroponic thread. Anyway I have some Cayenne's sitting out on a plate and didnt realize how quick they would start to dry up. I planned on using these for hot sauce or a salsa. Are these still ok to use? Is this a sign that I should be using them NOW or does this not make to much difference?

Also if any of you have any great and simple Louisiana style sauce recipes for wings and stuff, it would be greatly appreciated.

Let them dry; they'll re-hydrate in the liquid of the salsa/sauce without any loss of heat or flavor. Cheers.
 
Tie them into a ristra and they dry nicely.
