Enchiladas...

Verde's (con polo) are OK, and the rest of the Family likes that, but I prefer red, and then kick in the spice. Cheese=OK; cheese and onion=OK; Chicken=OK; Beef=OK; Pork=OK; Mystery ingredients=OK with more sauce/heat.
 
Mmmmmm, I made green last night. I'm a green chile kind of guy....
 
 
...but I don't know, the air was comin' outta me all night long....I certainly wasn't making any friends.
 
 
+1 on #7.... both for me too... depending on my mood. Last Monday it was Turkey Enchiladas in red sauce made with dried Guajillos. :drooling:

I've never mastered a good mole or red enchilada sauce and just doctor up the canned stuff.  Chicken with green chilli's and cumin are one of my made from scratch dishes.
 
AND I like to microwave or quick broil enchiladas in serving portions instead of baked together....don't like the soggy wraps when baking.  Give me hell if you want.

mrs. blues is a freak for enchiladas.
 
She crock pots either pork or chicken.
 
Corn or flour torts.
 
Sour cream.
 
Black olives.
 
Whatever flavor of the month canned enchie sauce.
 
Always red.
 
Loads of cheese.
 
Bakes it up at least 3 layers deep casserole style.
 
Super cheesy crusty top.
 
Sex on a plate.
 
When I met mrs. blues she couldn't boil water without burning the pot.
 
Now the woman makes her own roux.
 
Ever 'thang I ever cooked for her she has learned to do and do it better than I.
 
I have nothing left to teach her.

Mom always made them like this too and we LOVED it. She made hers with chicken and red sauce.
 
I also like:
Chicken or pork with verde and white cheese (queso fresco)
Chicken, beef or pork with red
 
Never was a huge fan of chili verde until eating the good stuff and making my own. Now roast pork or chicken with a verde sauce is just killer.
 
Still don't care for the mole though.
 
Chile Verde.
 
I love tomatillo.
 
Especially in salsa abocado.
 
Tomatillo, avo's, cilantro, lime juice, and hotness of choice.
 
I put that sheeit on ever 'thang.
 
Enchiladas.
 
Frito pie.
 
Shrimp tacos.
 
Chorizo, refried bean and egg tortas.
 
Or just chips and salsa.
 
Ever body needs this in their life.
