fermenting Fermented Sweet and Spicy Thai wing sauce recipe?

Is it possible to make a fermented Sweet and Spicy hot sauce without any cooking involved in the process?
 
What can I add to the mash, or to the blender before bottling, to make it sweet?

A sweetener that does not ferment. Search for the list, theirs about six of them like Xylitol.
