For St. Patricks Day - Colcannon

This is an old fave mom used to make, and it is pretty much the dish of Ireland.

Colcannon (Irish: cál ceannann - white headed cabbage) is a food made from mashed potatoes, kale or cabbage, butter, salt, and pepper. It can contain other ingredients such as milk, cream, leeks, onions, chives, garlic, boiled ham or Irish bacon.

Well, as my ancestors before me, I didn't have all the right ingredients..but no worries. It'd be better with ham and a darker cabbage or kale. However, I used some spicy pork sausage, regular cabbage and added fresh basil and a bay leaf.

Looks pretty good. How long did you cook it? I made Corned Beef, cabbage, and redskin potatoes on Sunday. It was pretty good. How did yours taste? Lovin the butter shot on the potatoes.

Looks really good Quad! I missed St. Patty's with a lot of my friends, so we're thinking of doing another one in April together. I might borrow this recipe.
 
It's delish!

Potatoes and stuff took maybe 10-15 minutes, the cabbage about 5. You really don't want overcooked cabbage..it's gross.

Prep time probably took as long as it took cooking it, but was worth it. :)

I may even fry some up as breakfast tmw as it made A LOT...heheh.
 
Colcannon hash perhaps? Maybe some bacon for good measure?! And perhaps a scrambled egg or two.

And since it won't be St. Patty's tomorrow, you might throw in some heat for good measure. Not that you couldn't do that today...
