color green or red? Jalpenos... what do you do?

I always say a red, ripe jalapeno is the most underrated pepper out there. It's hotter than people think (depending on the exact strain, of course, but generally speaking) and they taste richer (to me). And still a lot of the general public doesn't even know a Jalapeno ripens to red. Its crazy how often I get to tell people this.
That's the truth.  Ppl say things like "i didn't know there were red Jalapeños!"
 
It's only been a few years since I first started growing peppers.

I remember my first year, I would pick them green just like all the peppers I'd seen in the store. And I couldn't figure out why none of my peppers were hot. :)
