Habanero Rhubarb Loaf

Needed something sweet.
 
2 cups Fife flour (or regular flour)
2 eggs
3/4 cup buttermilk
1/4 cup coconut oil
1/2 cup butter
1 med size apple cut up small
2 cups Rhubarb thinly sliced
1/2cup coconut sugar
1/2 tbsp cinnamon
1/2 tbsp ginger powder
1  tsp powder habanero
Walnuts for topping
Maple syrup #3 for topping
salt to taste.
1 tsp Baking powder
 
Mix all except oil/ baking powder and let hydrate for an hour.
Pour oil in bake pan with parchment paper, keep a few tabsp for final topping after adding walnuts and syrup.
Mix in butter well, then add baking powder and pour into bake pan. Let sit for 15min, 10minimum. Add Wallnuts and pour some mapple syrup on top then add a few tbsp of coconut oil on top of that.
Bake 325f for 1:15 or till stick/knife comes out clean.
 
This was sooo good, was hard to stop with a nice cup of coffee :D

Looks great, I bet shredded carrots would help it be even moister, or was it moist? Cheers.
 
Yup, very moist, light and firm. This is basic coffee cake recipe, however they always have three times the sugar, first time I tried it was too sweet to eat for me, guess its an original recipe since they had no fridge way back and everything was either salty or sweet so it did not go bad. But if you have a sweet tooth then can always go to 1 cup of sugar lol.
