Heat Levels

I thought for sure this was asked, but I did a search on scoville and came up blank.

Is there any true ranking of peppers out there? I see where some peppers are ranked moderate on one list, but mild on another. Big Jim and tobago comes to mind.

Just seems a bit confusing to me some times. I understand some plants will vary in heat, but I wouldn't think they should vary from Anaheim to Cayenne in heat.

Well, many people would call a Jalapeno (or Fresno) mild to moderate... but honestly, I'd sooner to eat a Habanero than either one of those, because they don't burn like a hab, but STING like your tongue is in a jar of razor blades!

My point is that it's all subjective, each pepper has different ratios of different capsaicinoids that produce different effects to different people.
