Hello 4rm South Florida

Hello Everyone, Covid Gardener here turned into a Pepper Geek! 
I currently find myself with extra peppers I have no clue what to do with them. 
I hope to learn sauces, techniques and even would love to sell peppers. 
 
I currently have a ton of Peruvian Charapita pepper, would be great to learn what to do with them. 
 
South Florida weather is great to grow tons of stuff in but man o man I got a pepper haven to utilize, I'm open to any ideas.

In sauce making there's two main methods, fermenting or hot bath, they are covered in this thread, Making Hot Sauce 101
 
 
There's drying then grinding into powder to use in a shaker, fresh on food like pizza or cooking. Use your imagination!
