Hello from California

Hello pepper heads. My name is Aaron and I'm from the rat race known as California. Sacramento to be exact. I absolutely love hot peppers and growing them. In the last couple years I've been into making my own noob hot sauces, salsas, and spicy dipping sauces.
 
In my research to make more stable sauces I stumbled across this wonderful wealth of knowledge... and glad I did. I hope learn a lot from you pro's and one day become knowledgeable enough to be a contributing member.

Sweet. Unfortunately I'm not growing this year. We recently moved to Sacramento from Vacaville and the timing of the move was very bad and didn't allow us to get peppers in the ground. Next year were gonna go balls out though. We have a huge backyard and want to put in at least 50 plants.
 
This was last years grow. with my new backyard I wanna get 4 or 5 times bigger than I had before.

It pays to have good friends. I got a friend whose a more experienced and diverse grower than me but he know's that I'm missing my normal peppers so he rolled thru this weekend and hooked me up with some datils, lemon drops, haba-nada's for my oldest kid (she loves the flavor), red and orange lighting, and some charapitas for me (which I find delicious and hot).
 
When it comes to the super hots I'm pretty much a noob. All I know the normal shit you see on hot sauce bottle but he's exposing me to some cool super hots that Im not familiar with yet but Im loving the diverse flavor and heat. Im in the process of dehydrating these now. I know I should probably start a new thread but Im such a noob I dont feel comfortable doing that yet. If I could get some feedback from you fine greeters thats good enough for me.
 
I kept the placenta and seeds. Split in half and chopped them to a somewhat consistent size. Using an Excalibur to dehydrate at 120 degrees. Im only 2 hours in at the moment. The Excalibur has an internal fan so i made little alum foil trays.
 
My questions are.
 
1. Is 120 degrees the proper temp?
 
2. Is tin foil tray's a good idea? I only used tin foil cuz the dehydrator has an internal fan and I dont wanna have seeds falling from above into other types of peppers.
