I am going to give pepper fermentation a try this weekend. I have been reading Fermented Vegetables and Firery Ferments by Kirsten & Christopher Shockey. I am going to try their recipes for Habanero and Carrot hot sauce, for my daughter, and Baechu Kimchi, for her boyfriend.
 
For myself, I am interested in lower heat peppers. Does anyone have any suggestion for peppers under 1,000 scoville that can grow in a container in Denver?
