Welcome! I wanna go to the STL this weekend, but my car is falling apart right now.

When I make sauce I usually just use whatever peppers I have ripe. A couple of my favorites are

Yellow brainstrain
Sherwoods carbonero cream

Stick around and do some searches, you will find posts where people talk about why they do or dont like certain peppers
 
Start out with some inexpensive flakes like gochugaru (Korean pepper flakes). There is a Korean market on Olive at 141. They have flakes as cheap as $8/2.2lbs. ASSI brand, its what i use for kimchi. Hot oil made with Korean pepper flakes will be really mild but the flavor is really good.
 
Once you get the hang of it you can try adding supers to the mix. Its critical to not burn the flakes. Heated oil must be added slowly to the flakes. Watch this to get the idea how to add the oil
 
BTW when using supers for this KEEP YOUR FACE FAR AWAY when adding the oil to the flakes. Fumes are BRUTAL
