I suggest you make a lot of powder/flakes and freeze what you figure you'll use between now and the next harvest.

I'm still working on frozen peppers from last year actually... and this year my garden is bigger and hotter. I guess I got a little too focused on getting good at growing them.

I will definitely dry a bunch this year, if only so they take up less space in my freezer.
