Hi from Chicago!

Hey all! So I've been a hot sauce addict for years now, to the point of keeping stock of 10ml travel bottles for a job that constantly had me on the move across the country. Since leaving that life and returning to my hometown of Chicago I've been playing around with different sauces and have been doing some research on how to safely bottle my own hot sauces for long time use and storage. 
 
In doing research I found this forum and the depth of knowledge and passion for spice is incredible! I wish I would have found this all sooner. 
 
Just wanted to say hey and that I'm excited to see what everyone has to offer and hopefully soon start contributing some knowledge and experiments myself.
