Hot Apple Pie

I'm waiting for it to cool down a bit, but will be presenting my Habinero Cheese Apple Pie pics shortly... fresh outta the oven. :)

There's enough filling for two pies with this recipe...

15 apples ( 8 Granny Smith's - 7 Braeburns... all cored and sliced)
3 sticks of butter
6 oz pecans
4 TBLS Brandy
2 TSP nutmeg
2 1/2 TSP cinnamon
1/4 TSP salt
4 TSP cornstarch dissolved in a
1/2 cup pomagranate juice (or substitute w/apple juice)
2 cups brown sugar
3 oz bleu cheese
8 oz Habanero Jack Cheese (or substitute 8oz Monterrey Jack and 3 or more diced Habs) cut thin with a cheese slicer
Cream - enough to brush on the top crust before you put in the oven, (and play "Strange Brew" by Cream while putting this all together)

Melt butter in a 5 QT pot at medium heat and add the apples and pecans;
Stir together for about 3 minutes.
Add nutmeg, cinnamon, brandy, salt, brown sugar and cornstarch/juice mixture to pot
Stir the whole mess together and keep cooking for about 10 minutes until the apples begin to soften
Cover and set off the burner to cool to room temperature
Heat oven at 450°F
Put the bottom crust in your pie pan, poke a few holes with a fork and add the filling about halfway
Add some diced Habs around the top of the filling and then cover with more filling
Sprinkle the Bleu cheese and add a layer of Hab cheese
Cover with top crust and crimp edges together with a fork
Brush the cream over the top to give it a nice brown crust
Use some strips of aluminum foil around the edges to keep the edge from burning
(remove strips about 5 minutes before pie is done)
Put pie pan on a baking sheet and toss in the oven for 45 minutes
When the pie cools, serve with a few scoops of ice cream and Hab spinkles on top!

Bacon crumbles are optional.

...you can see the Hab slices peeking out of the pie... waiting to pounce on the unwary fridge raiders!
 
Thanks dude, if anyone else has a problem seeing the pics, then i'll definantly move them to one of those sites as there should be 4 of them showing.
