I placed a couple of vaccuum sealed frozen packages of peppers in frig last Friday thinking I could make some sauce last weekend. Well, that didn't happen and with everything else going on now I won't get to them until Thursday or Friday of this week. Can I still use these thawed peppes for sauce or are they compost material now?

How long can thawed peppers stay in frig?

It shouldn't be too late, but don't waste them, dry them. Then you can use them however you want.
They are complete mush right now but will still be good, just do not wait too long.
