How long to leave peppers on the plant?

Hi folks,
 
I want to make some sauce with my peppers but they are not all ripening at the same time. My Chocolate Habanero plant currently has 4 ripe peppers and 10 unripe ones on it. Naturally I want to wait until they're all ripe, but how long can I leave the currently ripe peppers before they start to rot? Any ideas?
 
And here they are, the first few Trinidad Scorpions and Chocolate Habaneros of the season. The rest of the peppers are considerably larger than these, then again these were the first ones produced.
