How long to leave peppers on the plant?

Hi folks,
 
I want to make some sauce with my peppers but they are not all ripening at the same time. My Chocolate Habanero plant currently has 4 ripe peppers and 10 unripe ones on it. Naturally I want to wait until they're all ripe, but how long can I leave the currently ripe peppers before they start to rot? Any ideas?

If you are making a sauce just freeze them

I always over look the obvious. sometimes an outsiders point of view makes all the difference

And here they are, the first few Trinidad Scorpions and Chocolate Habaneros of the season. The rest of the peppers are considerably larger than these, then again these were the first ones produced.

i have left a couple peppers on some jalapeno plants they just dehydrate none of them rotted
