food-bev Indian Prawn pickle

This pickle is incredible ! 😋 Definitely one of my favourites although I don't make it very often for a few reasons, it's more addictive then Heisenbergs crystal meth ðŸĪŠ prawns are quite an expensive ingredient ðŸĪ‘ and everyone eats it fast ! So it doesn't last long 😊

INGREDIENTS :

1/2 or 1lb of cleaned shelled prawns (smaller works better or chop up big fellas)

30 dried mild red chillies (ground to powder)

1 TBSP cumin seed (ground powder)

15 -20 garlic cloves (finely chopped)

100 ml white vingar

3 to 6 TBSP oil seed rape oil or Mustard oil

1 1/2 TSP sea salt

METHOD:

1. Mix All the ingredients to make a paste ( except the prawns )

2. Add to pan and gently bring to a simmer untill the oil separates

3. Add the prawns stir in and simmer till cooked (not long) 🙂

Add to small sterilised jars, you can eat it straight away but like all Indian pickles best left for a couple of weeks to age and improve 😋
