Is the Y stem for certain species or all

First year with peppers and didnt expect the main stem to y off. So is that for all species or certain ones?
 
I think that is a typical growth habit, although certain varieties
fork higher or lower, and there are variations even there.
Sometimes the plants fork into three branches.
 
There are several different "styles" of stems across pepper varieties. Some put out multiple stems from the base, while others just a single stem which, as you've noted, "y off" a bit up. Some are more compact, while some are quite bushy.

To me, that's one of the fun things about growing varieties you've never grown before - not knowing what the plant will really look like until it's mature.
