Just made my first pepper powders

i just finished making my first pepper powders ever. i am kind of excited about it actually. i powdered serranos, jalapenos, habaneros, and cayennes. it is also the first time i have dehydrated anything. i was given a dehydrator by my mother and decided to use it to preserve my crop this year. i used to pickle my peppers, but i am not crazy about vinegar. the dehydrator gave me a better option. my plan is to create some tasty dry rub recipes for meats. fingers are crossed...

Congrats on the new dehydrator, they sure can be fun to make things with. Why not post up some of your powder or salt pictures? I've been running my dehydrator now for a solid week to process a few pods. Here are some of the powders I make:

First powders are always fun! I still have about a pound of the first powder I ever made, and I may just sell some of it :)

walkgood, what types are those? the gray one looks intriguing...
Eric the gray one is Jalapeño and it came out so dark because I rushed thru it at high temperature and it was smoked as well. But you can run smoker at lower temps. now I take my time with low temps and the colors come out better, it’s really worth it to focus on the color for presentation, the pod does the rest for flavor and heat.

You can also mix in other powders, such as garlic, onion, etc. to enhance a rub or salt you make. Part of the fun is the experimentation. BTW the other two are yellow MoA Scotch Bonnet and the red is Jamaican Habanero, which also comes out much more red/orange at lower temps.

Good luck with them and don't forget to post up a pic of your creations :)

i feel a bit silly saying it, but i can't seem to find a way to attach pics.  i would love to post pics of my powders but i am befuddled currently... can you help?

alright!  with a little help from PexPepper i think i can do this.  let's see...

i am trying to get used to the pic posting procedure on the board... so it isn't as smooth for me yet until i get used to it.  other message boards allow me to postuploads from my computer.  this one requires that you upload to an image sharing site first then copy/paste the url.  but you guys already knew that!

well, it is my first batch.  there isn't much powder at all.  most of them are less than  2oz...  except Serrano which was over 3oz...  i will get better with time.

Oh I agree, I have gotten 1000% better in last 3 years. I was just looking at powder pictures I made from 2010 compared to last year and you would not know it was the same person.

This is a bad picture but you can see the colors in this picture from last winter. Keep on growing and practicing, only gets better!

Nice color on your powders Eric, I think Chris Joyner's point might be on the second to last picture as it looks a little moist to me but it's hard to tell. You can possibly use food grade desiccant or do what I do and put rice in a coffee filter to see if that can absorb the moisture out. If it's not too much it should work fine, if you can't get it all out, you could always try making salt with it and then use the rice pack. Between the two you should be able to dry it out enough ...
