Kaffir lime leaves... dried

I recently saw some of these dried kaffir lime leaves and was wondering what on nearth I should use them in. I've read that some people use them in sweet chili sauce, I was perhaps thinking of putting some in some rub/powder. Anyone have any experience with them?

No, but I have just bought a Kaffir lime tree to do exactly that !
I figured to make powder and use in sauces and cooking ?!
I love to use fresh ones with any asian or fish dish.

I have a small tree.I use the leaves in THai dishes fresh mostly.I generally chiffanade the leaves before using in a stir-fry.Lots of great flavor in these baby's.Mine are fruiting this year.I'm thinking I have maybe 20 fruit so far. They are good for zesting, but I know of little other uses for fruits.Might want to re-hydrate those dried leaves to tenderize them a bit.But by all means experiment!

I noticed they smell very strong. Do you know what the ratio of usage is?

Don't need much. They're strong, like rosemary. I messed up the first curry i made with the leaves by adding way too many.

I've added 4 leaves to a half kilo of chopped hab's and garlic for fermentation. Let's see how that works out.
