We reserve our brine post fermentation and utilize it in the cook (not all of it, a set amount as per our scheduled process) subsequently making it part of the sauce. I'm having trouble finding out how to list this as an ingredient on the label. Would it be the ingredient weights that make up the brine? (Water, Salt)
