Little question about fruit

Hi guys, i was just wondering, if i was to pick some fruit off my chili plants at there green stage, will they ripen to red or what ever color they may be?

If they're far enough along they will still turn.
 
Sealing fruit in a paper bag can speed the process. It gives off some kind of gas. This does not work with all underripe fruit.
 
Brown paper bag, or also note that putting it in a sealed environment (such as your paper bag) with either a ripe apple or banana also helps. Apparently, they give off some kind of gas or something.

The banana trick works really well with tomatos.
