LO baked chicken breasts, chopped and diced then heated and tossed with taco seasoning. diced red onion, lettuce and diced tomats. the white sauce is sour cream thinned a little bit with EVOO and also has grated cucumber. we were out of dill so we added a little green onion. toasted flour tortilla.
after i finished eating i realized i forgot these which i made a couple of days ago specifically for tacos. the hot sauce is one i made from powder and its not too shabby.

El Pic - there is an option to resize the image when you upload on postimage.
When you click the upload button it takes you to a screen where the default option is "do not resize my image". You can click there and scroll down to whatever size you like - up to 1600 x 1200. EZ pickled red onions. Great on burgers too
1 Medium red onion sliced thin
Pinch of salt and 2 TSP of sugar to weep the onions for 15min
1/8 Cup Acetum brand organic cider vinegar
3/8 Cup fresh squeezed lime juice
Pinch of Mexican oregano
Mix with fresh chopped cilantro or culantro just before serving (optional)
