Making Chile Rellenos

Hi have a question about making chile rellenos, I have a simple question.


I can make a simple egg batter but I don't have a fryer which the recipe I';m using calls for for!


So what would you do? Can I still fry it in the iron skillet / foreman? even though I still want to make the egg batter?
 
For something like a chile relleno (heavy and stuffed), shallow frying is best. Shallow frying is frying in a pan (your cast iron skillet is perfect) but the oil is shallow so you cook one side at a time. Since it will be touching the bottom of the pan and not floating, it will keep together well, and brown nicely.

Egg batter is best,iron skillet is best.gently wash the hot oil over the rellanos to seal the top.Just like beignets(sp)
Its all in the pepper and stuffing now!Good luck!
