Measuring potting mix pH

I was wondering if anyone has a good method for measuring peat pH (I use pro mix + coco coir). My tap water is around pH 7. I ran it through a sample of my mix and I measured the pH of the run off, it was still 7. I was wondering if this is an accurate measure of my actual pH.

Also, what pH should I be aiming for?

Did you just run the water through the mix, or did you saturate, wait, then add more water to collect runoff? I believe it needs to be in the mix for a little while to affect the ph of the water. Not an expert though.

The consensus seems to be 5.5 - 6.5 soil PH.
Elsewhere it has been suggested to soak the soil for an hour or so and then drain off some water and measure it. I haven't tried it yet, but will today. All I have is litmus paper to test with, so we'll see.
 
It makes sense that I should soak it for a while because it just seems like I'm measuring the pH of my tap water, not the mix. I'm afraid I might have added too much dolomite to my mix.

Should I be striving for a pH of 5.5-6.5 for peat too?
